OH, Willie!!!

This is probably one of the more random posts I’ve ever done, but I’m SO disappointed in Willie Nelson. Crazy, I know!
For whatever reason, deep down I’ve always liked Willie. I can remember when I was really young, and my grandma used to play us his song, Mamma’s don’t let your babies grow up to be cowboys. We used to dance around the living room singing along. I also want to dance to one of Willie’s songs with my grandpa at my wedding. There's just something sentimental about him.
Willie has always had these long piggy-tailed braids. Well, I’m sad to say he cut them off!!! Such a disappointment!! Personally, I like the piggies better.

This and That

*I think it’s stupid that websites charge you for running training programs

*I’m in love with sorbet. Mango sorbet to be exact! With all of my stomach problems, I’m on a new diet where I’ve had to cut out a lot of food, dairy being one of them. Sorbet is a pretty tasty substitute for ice cream!


*My wedding invitations came yesterday! The only bad thing is we have to hand-tie all of the little ribbons that go around them

*Ben and I finished our premarital counseling last week. I really enjoyed it and learned a lot

*My parents have baby rabbits living under their back porch and KiKi is completely obsessed with them. She just pokes her head out her doggy door all the time. She’s so preoccupied that she doesn’t even beg for food anymore

*I am ready for summer! I'm tired of this cold one day, hot the next and a little snow thrown in

Lindsey and Ben's Day of Fun

There's a farmer's market not too far from Ben's house on the weekends. One of the booths is the biscuit bus. It belongs to The Denver Biscuit Company, a restaurant my mom read about in the paper. Oh my goodness!!! The biscuits are heavenly!! They're perfectly flaky and oh so delicious! Ben had a fried chicken biscuit sandwich and I had traditional biscuits and gravy. YUM!

That afternoon we headed over to Coors Field for our first Rockies game of the year. We were supposed to go the night before, but it was rained out. It was a great game and the Rockies pulled out the win.

Today we had engagement pictures taken by our wedding photographer, Ryan McCarthy. We trekked all over downtown and had a great time. I can't wait to get our pictures back!

Good News All Around

May is filled with good news!

~Yesterday, my dad got a new job!! He is the newest employee for Denver Water! My dad quit his job last October for several reasons and this new job is truly a blessing

~Ben’s dad was diagnosed with melanoma last month. He’s had several tests done and lymph nodes removed and tested. This week, the oncologist said he’s 95% sure his scan will come back in the clear

~I get to see my sister in June! Ben and Jeff are doing a triathlon out in San Diego and I found a $59 ticket! Woo Hoo!

I guess that’s all of the BIG good news, but it is only the 1st week of May…I think it’s going to be a great month!

Homemade Pizza and a Tea House

Friday night Ben and I made homemade pizza. It was delicious and a lot of fun! My half was extra cheese and tomatoes. Ben's had pepperoni and green peppers.

Saturday my mom and I went to the Wildflower tea house in Broomfield. It was a blast! It's authentic British food and out server had an awesome British accent. You feel like royalty when you visit them.
We had 2 different teas during our visit. The first one was black tea with cream and sugar (pictured). Later we had a maple syrup and berry tea.

Our first course was homemade scones in the shape of a heart with English Devonshire Cream and Strawberry jam
Next we had our choice of soup or salad.
They brought out this sweet and savory tier. On the bottom there was quiche, egg salad sandwich wedge, crackers with chicken salad, a seafood salad, and a dill something or other.
On the sweet tier, there was a strawberry red velvet cake, a brownie, a sponge cake, and a chocolate eclair. Delicious!

To finish off our meal, we got a glass of champagne

It's English tradition on May day for dancers to wake up before sunrise and bring the sun up. Since, it was May day, they stopped in and showed us some of their traditional dances.
